Struggles and BBQ Nachos.

Ok.... Let's start again. 10 days before Christmas is not the time to start a challenge like -40 by 40.

Christmas Eve I just know I'm going to over eat. We always do things like sandwiches, dips, meatballs and those amazing little smokies. BUT- this year my aunt just about did me in. She made BBQ nachos!! I love that dish. I ate way too much. I'll include a recipe below.

Today is January 6, I've worked out for the past two days-YAY!!

I haven't lost any weight since I posted the challenge but I haven't gained any either.

A few years ago I met, and fell in love with, Fitness Blender. So, after a five month break of working out, I'm back at it. Leg day yesterday and upper body today. And. I. Hurt.

BBQ Nachos. (disclaimer-This is NOT healthy)

You can use a pork tenderloin, or chicken if you don't do pork.

3lbs of chicken or pork tenderloin
a bottle of your favorite BBQ sauce (We like Sweet Baby Rays)
nacho chips
nacho cheese dip
sour cream
JalapeƱos (optional)
Hot sauce (Optional)

Put the meat of choice into a slow cooker and cook in low for about 6 hours (or high for 4).
When meat is cooked and tender take it out and shred it well. Dump all but about a cup of juice from the slow cooker and then return the meat. Add BBQ sauce to your own taste and let it warm for about 15 minutes.
Meanwhile, warm the nacho sauce either in the microwave or stove top. Then layer chips, bbq, cheese and any toppings on a plate and you will have the most amazing food ever created.

The Challenge....

Last night I made a drastic decision. I decided I wanted to lose 40 lbs before my 40th birthday.

Lets back up a little- I have never been super skinny. Growing up on a farm I was really active even into my teenage years I was never overweight, just....big boned, if you want to use the old cliche'.
In college (isn't that always when it starts) I would go out with friends and we'd eat a full meal at midnight. That, along with being less active led to a 20 lb weight gain. Getting married led to even more and pile on three pregnancies... well you get the picture.







I have tried many times to get my eating and exercise under control, to no avail. Something would always throw me off after only a few weeks-illness, holiday, weekend out of town. I've joined fresh produce coops that guaranteed I get fruit and veggies every week, I've joined the YMCA and went regularly for a few months. Something would always         throw me off track.

In March of 2018 I started eating right and exercising regularly and that lasted 6 months!! The longest yet and I lost 20-30lbs. I'm not entirely sure how much because I don't really know what my weight climbed to, but it was my highest ever.

Around Labor Day I hit that block and stopped all healthy habits, as a result I have gained back about 7lbs.

Last night I decided that I will start my fourth decade at my healthiest. My goal weight is about 40 lbs away.

The challenge before me: Lose 40 lbs

The time frame: 24 weeks exactly from today. 168 days.

This means I will have to lose 1.6 lbs a week which is totally do-able and healthy.

The method: healthy eating and exercise.

This blog is really more of a journal for myself that you are welcome to read and for some accountability.
